Not wanting the heat to defeat us we were determined, one hot winters day, to create a refreshing drink. And here's what Jessica came up with.
Cucumber juice!? To me it sounded a bit wacky but, to my surprise, it turned out to be the most summerlike drink that I've ever tried.
Here's how to make it:
STEP 1

Collect all the juice. At this point it does smell and look rather funky. Have faith, the end product is worth it.
STEP 2
There is a lot of juice left in the pulp so mix the pulp with fresh mint leaves and put it all through the juicer again.
STEP 3 |
| Sieve the juice into a large jug. Then use a spoon to push more juice out of the pulp.

STEP 5 - decorate!
Have a bowl of natural brown sugar and a saucer of cucumber juice ready. Dip the rip of your glass in the juice and then the brown sugar to decorate it.
